TERIYAKI FRIED CHICKEN: A MOUTH WATERING CUISINE

History: The origin
It is believed that Teriyaki was invented by Japanese in the seventeenth century.  Teriyaki word is derived from the word ‘teri’ that means shine given by the sauce and ‘yaki’ is the cooking method followed by Japanese cooks. The grilling, broiling, frying or roasting of sliced meat in a different sauce that is a blend of sake or rice wine, soy sauce, mirin( Japanese rice wine) and sugar is the popular cooking Japanese method called as Teriyaki.

Teriyaki Chicken is prepared by dipping the chicken in the sauce multiple times to become tender. This dish has also become popular in the USA around 1960’s. With time, there was an evolution of different types of teriyaki sauce recipe but the traditional way is still popular and exceptional.

Ingredients:
•    Boneless skin (chicken thighs): 340 g
•    Ginger: 1 teaspoon (grated)
•    Salt: ¼ teaspoon
•    Vegetable Oil: 2 teaspoons
•    Honey: 1 tablespoon
•    Mirin: 1 tablespoon
•    Sake: 1 tablespoon
•    Soy Sauce: 1 tablespoon

Directions:
·         Take salt and ginger and rub it into the chicken and wait for 30 minutes at least. After that dry the chicken and remove ginger pulp.
·         Take a heavy bottomed frying pan and pour some oil in it and heat it on medium mode.
·         Now add chicken to the pan and fry it until the bottom side turns golden brown and then flip it. Add 1 tablespoon of sake and cover the pan using a lid. Chicken should be steamed.
·         Take 1 tablespoon of mirin, sake, honey and soy sauce each in a bowl and stir well to form teriyaki sauce.
·         Remove the lid and dry the extra liquid and oil.
·         Turn the heat mode to high and add teriyaki sauce to the pan. Let it boil and keep flipping the chicken again and again so that the sauce coats evenly on it.
·         When the sauce thickens and forms a layer around the chicken, the dish is ready to serve.
