History
The
emergence of grilling as a widespread cooking method can be linked to certain
events in history. The very beginning can be traced back to man’s taming of
fire. Till the 1940’s grilling was limited to picnics and campsites. But with the
end of the Second World War, and reorganization of urban accommodation into
suburbs, backyard grilling gained widespread popularity.
Skewered
grilled meat is synonymous with several Middle Eastern countries such as
Lebanon, Bahrain and Abu Dhabi. It gradually attained popularity all over the
world for its ease of cooking, and the fact that it eliminated the need for
cutlery.

Ingredients:

Chicken-
3 pounds
- Red wine vinegar- ½ cup
- Minced garlic clove- 1 no
- Coarse salt- 1 ½ teaspoons
- Honey- 1 tablespoon + 1 teaspoon
- Extra virgin olive oil- 2 tablespoons
- Freshly ground pepper
- Large red onion- 1 no, cut into 8 wedges, root left

Ensure that the oven
is preheated to 375 degrees. Prepare the marinade by stirring together vinegar, garlic, salt, honey, and oil in a large bowl. Season with pepper. Add the
chicken and onion to the bowl and let it stand at room temperature for 15
minutes. Toss the contents occasionally to get the right consistency.

Thread the chicken and onion wedges onto the
skewers. Grill over a medium flame for 16 to 18 minutes, turning the skewers
halfway through and brushing the marinade on until the chicken is thoroughly
cooked and the onions are charred.
